Monstrous Meringue Mayhem
Yet again, a recipe has failed me. I believe it was due to wrong proportions or something like that. I wanted to make beautiful, puffy, light meringues, but instead I ended up with chewy hockey pucks. Not so good. Oh well, at least I had fun doing it. Following this video was the reason for my disaster. This is the record of my failed process.
Last night I tired making one of my favourite Vietnamese dishes, Phở, which is essentially a spicy beef noodle soup. It's a dish that at its core has a very flavourful broth with many complex flavours, which proved fairly difficult to replicate. It takes a lot of time and love to create this stock, which carries the flavour for the whole dish. Unfortunately for me, I did not have too much time that I could invest in making an awesome soup from scratch, so I ended up following this 5 minute recipe. I also lacked a fair few of the key ingredients. Alas, I did not let this be a stumbling block for me, I improvised! This is how I made my quick and easy Phở.

Grilled 'Egg In The Basket' Sandwich
This recipe was a bit of an experimental one. I was influenced by this scene in 'V for Vendetta', where V is cooking an egg within a slice of bread (known as an 'egg in the basket'). I then saw this video which took it too the next level, by inserting a layer of cheese between the slices and thus, converting it into a grilled cheese sandwich. Stay tuned for more of this experimental wonder.

Succulent Salmon Steaks
After my sushi recipe turned out really good, I wanted to do another salmon based dish because salmon is so yummy! YouTube once again was my saviour and gave me this video, which lead on to finding this one too. I used bits and pieces from both recipes to create my own one, and the result was pretty excellent. Read on for more fishy goodness!
