What we will need to get started:
1. 1 packet of tortilla chips (I used regular CC's corn chips)
2. 1 small pack of lean ground beef/mince
3. Grated melting cheese (I used mozzarella)
4. 1 can of kidney beans, drained (could substitute for refried beans)
5. 1/2 bottle of tomato sauce/paste (I used a pasta sauce)
6. 5 olives, sliced
7. 2 small tomatoes (or 1 large one)
8. 1/2 an avocado
9. 1/2 a small spanish onion
10. 1 spring onion, chopped
11. Optional: 5 jalapeño chillies
12. Optional: 3 scoops of sour cream
Procedure 1: For nachos
Step 1: Cook the meat
Start by placing the meat in a pan on a high heat.Allow the meat to brown for a few minutes, then add the tomato sauce.
After mixing the browned meat and sauce for a few minutes, add the kidney beans.
Mix well and allow the mixture to heat through. If the meat and beans mix seems a little too dry, you can add a little water and let it simmer. Have a little taste, and season accordingly.
Step 2: Preheat and prep
In the meantime, preheat the oven to 180°C (356°F) fan forced (I used the grill option for quick cheese melting!).While the oven heats up, line a baking tray and arrange the tortilla chips. To ensure that every chip gets covered in a topping, arrange it all in one layer. This also permits for even heat distribution.
If the meat is ready (not too wet, not too dry), then add a thin layer to your chips. I probably added too much on mine, that's why my end result was a little soggy :P
Cheese it up! You can never have too much cheese!
Pop the tray into the oven just until the cheese has melted.
Procedure 2: For salsa
Step 3: Chop and mix
In the meantime (if you are quick), you can start chopping up your vegetables for the salsa. Unfortunately, I was not quick enough, and the edges of my chips got burnt :(Mix all the vegetables (tomato, avocado, spanish onion, spring onion, olives, jalapeños) together with a squeeze of lemon juice, a pinch of salt and a dash sugar to make the salsa
Step 4: Put it all together
Take the tray out the oven and pour the salsa on top. Finish with scoops of sour cream.And there you go! Hot, fresh nachos, ready to be devoured :)
They were surprisingly good and satisfying. Me and my brother tried to finish it, but we only got halfway, it was way too much! This recipe is probably best for sharing with a family. It was fun to make and yummy to eat.
If I were to make it again, next time I would try make the meat less saucy so that the chips don't get too soggy. I would also keep a close eye on the chips in the oven so as to not burn them again :P
